Maple Syrup Flowing


Mid-March was perfect weather for boiling sap. Steve Davis of West Winfield took advantage of the warm, partly sunny weather recently at his sugarhouse called Captain’s Grove. This is Davis’s 68th year of making maple syrup. He said he has around 350 local trees tapped. Although he didn’t officially take part in Maple Weekend this year, he said he’s been busy filling special orders. One of his specialty products is maple peanuts. Over the years, Davis’s maple products took first prize at the Herkimer County Fair and the New York State Fair. Ben and Judy’s Sugarhouse in West Edmeston opened for the two Maple Weekends, showing visitors how their trees are tapped to make all their maple syrup products. More photos, Page 6
